Paleo Pumpkin Bread (GF)

Hey everyone, this is my very first pumpkin bread recipe! It's gluten-free, grain-free, and refined-sugar free. So all my paleo people, you are in the right place! Also, anyone who just happens to love pumpkin bread, you are in the right place too. This loaf is delicious and will be on repeat all Fall in my house. I hope you enjoy!! 

  • 1 cup blanched almond flour
  • 1/2 Cup coconut flour
  • 1 tsp baking soda
  • 1 cup pumpkin puree 
  • 3 eggs 
  • 1/3 cup coconut milk 
  • 1/3 cup maple syrup 
  • 1 tsp vanilla extract 
  • 1 tablespoon coconut oil 
  • 1 tablespoon pumpkin pie spice
  • pinch of sea salt 
  • Chocolate chips optional!

Directions:

  • Preheat oven to 350F
  • Line or spray loaf pan with parchment paper
  • Mix together wet ingredients
  • Add dry ingredients to wet and mix 
  • Pour batter into pan 
  • Bake for 60 minutes (stick tooth pick in and should come out clean!)
  • Let cool for an hour
  • Enjoy!!
