Curry Roasted Cauliflower (V, GF)


I absolutely love cauliflower because it’s basically a blank canvas and can take on so many different flavor combinations. Cauliflower is a cruciferous vegetable- so rich in vitamins, nutrients and minerals. Curry is made up of a few different spices that are SO beneficial for your body. Basically, all you need to know is that this combo is delicious & healthy AF! I love making a big batch of this at the beginning of the week to add to my meals! It's also the perfect side dish or main dish for my vegetarians out there! Throw this Curry Roasted Cauliflower over steamed rice with some roasted chickpeas and call it a day!


  1. 1 head of cauliflower 
  2. 3/4 tablespoons Avocado oil (stable for high heat cooking)
  3. 3 tablespoons curry powder
  4. Fresh garlic cloves 
  5. Sea salt 
  6. Black pepper
  7. Chopped cilantro 


  1. Preheat the oven to 400F and put the rack on the lower end of the oven
  2.  Cut Cauliflower into florets in a bowl and toss them in 3-4 tablespoons of avocado oil
  3. Add about 3 tablespoons of curry powder
  4. Sprinkle salt, pepper, and garlic cloves
  5. Put seasoned cauliflower on a baking sheet and put the tray in the oven for 25 minutes
  6. Flip the florets after 12 minutes or so
  7. For 5 minutes broil the florets until they are soft and browned
  8. Sprinkle on some cilantro if you like!
